Maple Sugar Season 2024 In New Hampshire!
In 2022, New Hampshire was ranked sixth in country in maple syrup production, producing 167,000 gallons of maple syrup.
The season in our area for the average producer typically runs from about early/mid -February to early-April, depending on the weather and what type of equipment a producer uses. However, maple sugaring is a year round endeavor for us. Equipment must be cleaned and cared for, the sugarbush, lines and equipment must be maintained and a lot!! of wood must be cut and split (feel free to stop by for a workout).
In the early spring, as the frozen sap in the maple tree thaws, it begins to move within the tree. When that movement occurs, sap will flow from any fresh wound in the tree. Freezing nights and warm sunny days create the pressure needed for a good sap harvest.
We start heading out in December or January, again depending on the weather, to tap sugar maples with lines and set up our equipment in the woods to start the collection process.
Once sap is collected it is transported to the sugarhouse where it is boiled down in an evaporator over a very hot, wood-fed fire. As the steam (water) rises from the evaporator pans, the sap becomes more concentrated until it finally reaches the proper density to be classified as syrup. It is then drawn from the evaporator, filtered, graded, and bottled. It conservatively takes forty gallons of sap to make one gallon of pure maple syrup.
